oatmeal chocolate chip coconut cookies

my roommate dustin said i had to make him cookies from scratch the other night… this is what my stoney mind came up with……..

Mutha-beepin Ingredients

  • 1 cup shredded coconut!!!!!
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup dark brown sugar, lightly packed
  • 1 cup granulated sugar
  • 2 extra-large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons hot water
  • 1 cup semi-sweet chocolate chips!!!!!!!!
  • 1 teaspoon salt
  • 2  cups old-fashioned oatmeal

Directions

Preheat the oven to 350 degrees F.

GET OUT YOUR MIXER AND GET EXCITED. YOUR MAKING FUCKING COOKIES! ITS GOING TO BE AWESOME! beat that butter!, brown sugar, and granulated sugar together until light and fluffy. Turn the mixer to low, add the eggs, one at a time, and then the vanilla. Dissolve baking soda in hot water and add.

Sift the flour and salt together into a medium bowl. Or if your lazy and dont have a sifter just swirl them together with a fork. With the mixer on low, slowly add the flour mixture to the butter mixture. Then add the oats, choc chips, and coconut and mix just until they are all friends.

Using preferably clean hands or a spoon drop 2-inch mounds of the dough onto sheet pans lined with parchment paper if you havnt eaten it all already. Flatten slightly with a damp hand. Bake for 12 to 15 minutes, until lightly browned. Transfer the cookies to your MOUTH after they sit for a while. Dont forget your MELK peeps!

if you dont have parchment paper then just make sure you keep your eyes on them while they are in the oven because they will be a little burnt on the bottom.
